I have not been a meal prepper, but since I've been spending more time at home, I realized that my energy level wanes toward dinner time and if I get in the kitchen MUCH earlier and get the chopping and measuring done, I can look forward to cooking instead of dreading it. My husband is always so kind to say, "let's order something... " which is not what I want to do.
